Blueberry Muffins
Ingredients:
3 cups blanched almond flour
1/4 teaspoon sea salt
1 1/2 teaspoons baking soda
2 tablespoons coconut oil, melted
3 large eggs
4 mashed very ripe bananas
1 cup frozen blueberries
Instructions:
1. Preheat oven to 350F. Grease or line 10 muffins cups.
2. In a large bowl, combine the almond flour, salt and baking soda. In a medium bowl, whisk together the coconut oil and eggs.
3. Stir the wet ingredients into the almond flour mixture until thoroughly combined. Stir the bananas into the batter, then carefully fold in the blueberries (you don’t want a purple batter). Spoon the batter into the muffin cups.
4. Bake for 35 to 40 minutes, until the muffin tops are golden brown and a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool in the pan for 30 minutes, then serve or store in the refrigerator.

Meatballs
Ingredients
serving size: 12-15 balls 1 lb of grass-fed ground beed 1 lb of natural or organic ground turkey or chicken 1/2 cup almond flour 3 Tbsp ground flax seeds + 6 tbsp. warm water - pre mix in bowl 1 Tbsp olive oil Instructions: Preheat oven to 350. Mash all ingredients together in a bowl until well combined. With damp hand roll into 20 medium-large meatballs on two cookie sheets. Cook on 350 for 20 minutes or until done. Tomato Salad Cut up 2 tomatoes into chunks. Mix them with fresh herbs, shredded carrots, and lettuce diced up. Top with meatballs (or have meatballs on the side). Drizzle top with a lot of olive oil, some apple cider vinegar, salt and pepper. |

1 Avocado, mashed
1/4 tsp garlic powder
1/4 tsp onion powder
Pinch of sea salt
Pinch of pepper

Dice up the chicken breast. Mix with mashed avocado and spices. Serve over a salad.
